    • Distinctly Sour Taste: The hallmark of Ijebu garri is its sharp, fermented tang, which contrasts with the milder, sweeter white or yellow garri varieties.

    • Processing: The finely grated cassava is fermented for an extended period (often 7 days or more), which helps reduce dietary cyanide levels and imparts its unique savory flavor. 
    • No Palm Oil: Unlike yellow garri, Ijebu garri is fried without palm oil, leaving it a crisp, natural white-to-cream color.
